Coconut Cornflake cookies

Since I bought the JUMBO bag of coconut at Costco, I've been frantically searching for some recipes to use it up. One can only make so many Pink Ladies, although I know a few ladies who would beg to differ. This recipe is a nice change from the usual chocolate chip type of drop cookie.
 

Coconut Cornflake cookies

1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 5/8 cup flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 cup Corn Flakes
1 cup coconut

Cream butter and sugars. Add egg and vanilla. Add dry ingredients and fold in Corn Flakes (slightly crushed) and coconut. Drop by large teaspoon onto cookie sheet. (I used an ice cream scoop). Bake 8-11 minutes at 350 F. 

These made a nice soft cookie with just a hint of a crunch. I made a double batch (with help from my sous chef, Kate) so I had plenty to give away tomorrow for National Scrapbooking Day. I think they'll be a hit!
