Banana Muffins

Someone should invent bananas that ripen one day at a time instead of all at once. There seems to be the perfect degree of ripeness and then they all go off at the same time resulting in the necessity of baking. Which maybe isn't a bad thing. Everyone has a banana muffin or bread recipe but this is MY favourite....

Banana Muffins
3/4 cup white sugar
1/2 cup butter or margarine, melted or softened
1 egg
1 tsp baking soda dissolved in 1 Tbsp hot water
1 cup mashed ripe banana
1 1/2 cup flour
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla

Bake in lined muffin cups at 375F for 12-15 minutes
