Fruit Dip

I was recently reminded of this recipe when my Aunt J, texted to ask what the ingredients were. I've never written it down but surprisingly, I could still remember what was in it. So easy to make and delicious with fruit. You can make it lower calorie also by using lowfat yogurt and Cool Whip light. Makes very little difference in the taste. Oh and it's gluten free also which is a bonus.

Fruit Dip
Strawberry yogurt ( a small container )
Vanilla pudding (dry) a couple tablespoons
Cool Whip Light, 1-2 cups
You can vary the ingredients depending on how thick you like it or how much you want to make. You really can't go wrong with this combination

Feb Swap Challenge Cards

We are still going strong and exchanging our monthly cards. I'll start because my card is pretty basic and I'm not gonna lie, I copied it directly from a blog, which I now can't find. I didn't even remember that I HAD this die set but I'm so glad I do.
I love kraft paper and die cutting. Makes the process so much easier. This is the set I used..
Isn't it just darling? I can't wait to use it again.

Keri used some products from Your Next Stamp. So exciting to have a local company.
She put so much work into this card. Not only did she die cut and colour an image, but she filled in all those holes with scraps of design paper and then made it a SHAKER card! I'd better step up my game. The inside of the card says.... "it takes balls to knit"

Spiralized Potatoes

When I was on vacation, I spotted the Vegetti at a great price so I picked it up and I haven't looked back. I've been enjoying spiralizing and then I tried it on ordinary potatoes. I don't think the intent is to use it to load up on carbs, but these are so delicious, I can't stop making them.
They are quick and easy to make especially if you have this model...
I have also used it for other veggies including zucchini but that's a story for another day...
Spiralized Potatoes
These amounts are approximate. I usually just make one potato

1 potato
olive oil to drizzle (1/2 to 1 Tbsp)
1 tsp chili powder
1 tsp garlic powder
1 tsp paprika
1 tsp Seasoning salt (I added this, not necessary if you are trying to watch your salt)

Preheat oven to 425F. Spiralize potatoes. Toss with olive oil, then sprinkle on spices and
stir to coat well. Place on parchment paper on a cookie sheet and spread out well. Roast about 20 to 25 minutes, turning once, depending on how crispy you like them.
