Bran Muffins

This may not have been everyone's first pick at the Crop because it's not fancy but it is a delicious and easy to make muffin. Moist and tasty, this is my dog sitter's (Aunt Donna's) Number ONE request when I'm baking.
This recipe came from a Cookbook columist in the Brantford Expositor named Mary Moore many years ago. My mother had cut out dozens of recipes from this lady and they are always quite good. I think you'll enjoy these bran muffins.

Bran Muffins
1 cup flour
1 cup bran
2 Tbsp. wheat germ
3/4 cup brown sugar packed
1 tsp. baking soda
1/4 tsp. salt
Mix these dry ingredients.

1 egg
1/3 cup oil
3/4 cup buttermilk or soured milk
1/2 cup chopped dates or raisins
Mix wet with dry ingredients. Fill 12 muffin cups. Bake at 375F fro 18 - 20 min.

Note- To make buttermilk put 1 Tbsp. of vinegar in bottom of measuring cup and fill to 3/4 mark with sweet milk and let set for 10 minutes.
