Pinterest Birthday Card

I made this card a couple times now after seeing it one like it on Pinterest. I had purchased a set of diecut numbers and wanted to use them and this was the perfect time. I was able to interchange the special number for both a 16th and a 75th birthday. The problem was, this card is impossible to photograph. My camera doesn't like the black on black but you get the idea. The top of the card if popped up for dimension (use black foam dots) and a couple jewels were added to bling it up. My friend made it in white and that worked well also.
I heat embossed the sentiment (after the fact). Make sure you do this step before you adhere the top of the card or you'll be forced to do it on another piece of paper and add it after.

The Farley Foundation

One of the charities that I have selected to support through this year's Scrapbooking Crop is The Farley Foundation. This Foundation, in addition to having the cutest mascot ever! (Farley from the comic strip For Better or Worse) provides funding to help people in need pay their Vet bills.

The funds are made available to Veterinarians to dispense to those who fit the following criteria:
Seniors, Disabled Individuals, Ontario Works recipients, Senior Care Facilities and the OVMA Safe Pet Program (women at risk of abuse who are entering shelters)

For many of these individuals, pets play a vital role in their lives and the cost of proper vet care can be prohibitive. I can attest to the cost of keeping pets as I recently took both dogs in for their routine care and was quite shocked at the total for 2. I know my Vet, as well as many others will make allowances for charitable work and this fund can allow them to assist many more.

Loonies for Lindor Work Bee

There are many jobs to do before the big charity scrapbooking event on June 21 and although I'm a bit of a control freak, I know I have many talented and hard-working friends that are more then willing and capable of helping out. We spent a pleasant afternoon not that long ago getting another job crossed off the list.

Coconut Cornflake cookies

Since I bought the JUMBO bag of coconut at Costco, I've been frantically searching for some recipes to use it up. One can only make so many Pink Ladies, although I know a few ladies who would beg to differ. This recipe is a nice change from the usual chocolate chip type of drop cookie.
 

Coconut Cornflake cookies

1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 5/8 cup flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 cup Corn Flakes
1 cup coconut

Cream butter and sugars. Add egg and vanilla. Add dry ingredients and fold in Corn Flakes (slightly crushed) and coconut. Drop by large teaspoon onto cookie sheet. (I used an ice cream scoop). Bake 8-11 minutes at 350 F. 

These made a nice soft cookie with just a hint of a crunch. I made a double batch (with help from my sous chef, Kate) so I had plenty to give away tomorrow for National Scrapbooking Day. I think they'll be a hit!

From the Heart Stamps- Spring Medley Monthly Challenge

I let it go down to the wire this month. I got home from work and realized I only had tonight to complete the challenge and I'm leaving for Obedience class shortly. This really made me make some pretty quick decisions and I was forced to break into my new Doodlebug collection that I had been hoarding. Here's what I came up with:

Loonies for Lindor Work Bee

A couple unsuspecting friends stopped over in the middle of our Loonies for Lindor work bee on Sunday afternoon. One of the jobs I had on my list was to make sure all the adorable raffle cans made by my friend Robin were in good order and had their numbers on correctly. Taylor was able to make quick work of this project.
We have such generous donators to the raffle that I had to request 15 more cans.
Lindor thought she would "supervise" the proceedings.....

Island Coconut Pie

I always try to switch things up a bit when I bring the desserts to the family functions but the old favourites always seem to win out. I thought this was a decent effort though and wanted to try something new. The recipe made more filling than a purchased deep dish pie crust could hold so make sure you're ready with about 8 tart shells to bake the excess in. I would make this again. Tastes like a cross between a butter tart and a pecan pie.

Island Coconut Pie
2 cups white sugar
1 Tbsp. corn meal
1 Tbsp. flour
5 eggs
pinch of salt
1 cup pecans, coarsely chopped
1 cup crushed pineapple (drained)
1 cup flaked coconut
1/2 cup butter, melted
1 unbaked pie shell

Beat the sugar, corn meal, flour, eggs and salt together. Gently stir in pecans, pineapple and coconut. Stir in melted butter and mix well. Bake at 300F in an unbaked pie shell for 50 - 60 minutes. Cover the crust with aluminum foil if it is browning too much. Cook 15-30 min more or until pie is set.

Well, I'm off to  finish the raking. We've had several days in a row of really nice spring weather so I've been able to spread out the workload in the yard cleanup.
